Burong Singkamas: Refreshing Dish Perfect for Summer

Singkamas or Jicama is a popular root crop in the Philippines. The crop is mixed with greens for a hearty and healthy salad, and sometimes added to fresh lumpia.
Rootcrops like camote and gabi are staple foods for most Filipinos because it's a good source of carbohydrates and can be substituted for rice.
Singkamas is a good source of vitamins and minerals, aids in weight loss, has antioxidants, lowers cholesterol level and is a very good thirst quencher.
During the summer months of April and May, it would be helpful to munch on singkamas strips to stave off the heat.
Burong singkamas would be also a great side dish for the grilled and barbecued food during summer picnics. Here is how to do it:
Ingredients:
3 medium-sized singkamas, peeled and cut into strips
4 cups water
1 cup sugar
2 tablespoons salt
Procedure:
Boil 2 cups water with 1 cup sugar and 2 tablespoons salt. Let it cool.In a big clean jar, arrange the singkamas strips.Pour the water, sugar and salt mixture on the singkamas strips.Cover and refrigerate.Burong singkamas will be ready in 2-3 days.
