Easy Crockpot Pork Adobo

Since the classic Adobo preparation method lends itself so naturally to a slow-cooker, this recipe uses a basic Adobo marinade, and is simmered in the crockpot for six hours. And while this recipe may not be strictly ‘authentic', it certainly is easy and delicious!

Easy Crockpot Adobo

2 pounds boneless pork, cut into 1" cubes 1/2 cup sugar cane vinegar (substitute apple cider vinegar)1/2 cup soy sauce4 cloves garlic, peeled and crushed1 teaspoon sugar1/2 tsp black pepper, coarsely ground2 bay leaves1 cup chicken stock1 tablespoon cornstarch dissolved in 1/4 cup chicken stock or water.

Place the pork pieces in a large shallow dish, mix soy sauce, vinegar, garlic, black pepper, and bay leaves in a measuring cup and pour over the meat. Cover and place in the refrigerator overnight. Turn or stir after 6 hours for even marinating and continue to refrigerate.

Six hours before serving time, place the pork in a large crock pot. Stir chicken stock into the marinade and pour the mixture over the pork. Set the crock pot on low temperature and simmer for 6 hours.

When the pork is done, remove it from the crock pot, transfer the remaining adobo juices to a small saucepan and bring to a simmer. Stir in the dissolved cornstarch mixture and simmer, stirring constantly until the sauce thickens. Serve pork with sauce over steamed rice. Serves 4.

Note: This recipe may also be used for chicken. Substitute 4 chicken leg quarters, and follow the same instructions.
