Chef Niel Salvatera brings us another of Kusina de Manila's famous dishes, Red Snapper Delight.

Ingredients
- 1 red snapper (fried)
- 1 tbsp garlic
- 1 tbsp onion
- 1 ½ tbsp sugar
- 2 tbsp white vinegar
- 1 cup chicken stock
- 2-3 tbsp cornstarch
- 3-4 tbsp house-blend sauce (sweet-and-sour sauce)
- 5 julienned strips red-bell pepper
- 5 julienned strips green-bell pepper
- ½ cup julienned carrots
- 1 tbsp julienned ginger
- 5-6 strips tomatoes
- salt and pepper to taste
Procedure
Prepare fried red snapper on a serving dish. Saute garlic, onion, and ginger until light brown. Add the vegetables and sauté for another 30 seconds. Add the chicken stock, house-blend sauce, and let it boil. Add sugar and vinegar. Let it simmer for a minute or two. Then, add cornstarch to thicken the sauce. Pour this sauce on the fried snapper and serve while hot.
