Talbos Ng Sayote Salad


One of the dishes that the Bagobo-Tagabawa Tribe prepared for us on a trip to their Tibolo Cultural Village is the Talbos ng Sayote Salad (Chayote, Christophine Tops). 

In Kapatagan, Davao del Sur, sayote fruit is sold at 2 pesos per piece and one bundle of talbos is sold at 5 pesos.  I did not buy the sayote tops because I did not know how to cook it. Good thing they served it at the village. 

I asked one of the ladies for the recipe she's very generous to share it with me. Below are easy steps you can follow in preparing the salad.

Ingredients:


  • 2 bundles of talbos ng Sayote
  • 1/4 cup or roughly 4 tablespoons of Vinegar
  • 5 pieces of Kalamansi (Native lemon)
  • 1 small bulb of Onion bulb (sliced and cut into small pieces)
  • 1 finger of Ginger (sliced and cut into small pieces)
  • 5 medium sized tomatoes (sliced)
  • Salt and Pepper to taste


Procedure:


 Cut talbos ng Sayote then blanche for around 10-15 seconds then immediately run cold water on it.  Arrange on a plate. In a bowl, mix vinegar, kalamansi juice and ginger. Season with salt and pepper.Pour mixture over the sayote and toss.Arrange on a plate with the sliced tomatoes on top.
