One of the dishes that the Bagobo-Tagabawa Tribe prepared for us on a trip to their Tibolo Cultural Village is the Talbos ng Sayote Salad (Chayote, Christophine Tops).
In Kapatagan, Davao del Sur, sayote fruit is sold at 2 pesos per piece and one bundle of talbos is sold at 5 pesos. I did not buy the sayote tops because I did not know how to cook it. Good thing they served it at the village.
I asked one of the ladies for the recipe she's very generous to share it with me. Below are easy steps you can follow in preparing the salad.
Ingredients:
- 2 bundles of talbos ng Sayote
- 1/4 cup or roughly 4 tablespoons of Vinegar
- 5 pieces of Kalamansi (Native lemon)
- 1 small bulb of Onion bulb (sliced and cut into small pieces)
- 1 finger of Ginger (sliced and cut into small pieces)
- 5 medium sized tomatoes (sliced)
- Salt and Pepper to taste
