Beef Tapa


When it comes to iconic Filipino breakfast dishes, the tapsilog is often the first to pop in people’s heads: it’s easy to make, packed with calories and proteins, and helps jumpstart your day of work and play. 

But often as well, commercial beef tapa brands are pumped full of chemicals and extenders that make eating it every day a very unhealthy choice. So how do you make it healthier? Simple: make your own with ingredients you’re intimately familiar with.

Ingredients:
 
  • 1kg tender cut of beef such as sirloin or tenderloin, thinly sliced
  • 3 cloves garlic, finely minced
  • 1/2 cup soy sauce
  • 1/4 cup sugar
  • 4 tbsp. lemon juice or white vinegar (only if using tough cuts of beef like shank)

 
Procedure:

  • Simply combine all the ingredients together in a glass or metal bowl, cover with cling wrap, and refrigerate from 12 hours to 24 hours.
  • To serve, simply remove the beef slices (do not discard the marinade) and fry it in oil. Once cooked, add the marinade and gently cook it until the liquid evaporates and the flavor absorbed by the tapa.
  • Serve with fresh rice, egg, atsara, and coffee. Have a good morning ahead!
