Adobo Del Diablo


Filipinos love adobo. So much, actually, that every single region in the Philippines has a distinct recipe, completely unique from the rest of the country. It makes sense, since different geographies have different produce.

Imagine the basic adobo: meat, soy sauce, vinegar as the blank canvas, and depending on where you are in the Philippines, the vegetables and local produce are your paintbrushes.

Ingredients:

  • 500g meat (or meat combination) of your choice
  • 1/4 cup vinegar
  • 1/2 cup soy sauce
  • 3 cloves garlic, minced
  • 1/2 onion, minced
  • 2 siling labuyo, minced, seeds removed (retain the seeds if you want it extra spicy)
  • cooking oil


Procedure:

  • Marinade the meat in the soy sauce for at least 20 minutes.
  • After marinating, heat oil in a pan and brown your meat on all sides to lock in its moisture and flavor. Do not discard the marinade.
  • Remove the meat from the pan and set aside.
  • Using the same pan, saute the garlic, onion, and sili on medium heat until soft.
  • Once cooked, add the meat, soy sauce marinade and vinegar and simmer gently until the meat has been cooked all the way through.
  • Serve hot with freshly cooked rice. Enjoy!
