Crispy Lechon Lawali
Lechon kawali is a Filipino crispy deep-fried pork belly. Unlike the popular roasted lechon, the kawali version is easier and quicker to make.
Ingredients
- pork belly
- onions
- garlic (optional)
- peppercorns
- bay leaves (optional)
- salt and pepper
Instructions
- In a large pot, put in pork belly and boil the water. Throw away the floating grime that comes from the meat.
- Add onions, garlic, bay leaves, peppercorns and salt. Simmer until pork is tender.
- Remove pork from the pot and pat it dry. Optional: you can season your pork belly with your favorite spices before deep-frying to add your personal flavor.
- On a separate pan, heat oil and deep-fry the pork belly. (If you have a deep-fryer, set the temperature to 350 °F for about 15 minutes or until skin is already crispy.)
- Serve and enjoy!
