Kare-Kare
The classic Pinoy comfort food, perfect for any situation, place or weather.
Ingredients:
- 1 liter of water
- cooking oil
- 250g chicken drumsticks and thigh
- 1 small to medium onion, chopped
- 1 small to medium whole garlic, crushed
- 1/2 bud banana heart
- 2 whole eggplant
- 1 bunch string beans or baguio beans
- 1 bunch bok choy or pechay
- 1 pack or 100g peanuts, crushed
- 1 pack or 20g rice flour
- 1/4 cup of peanut butter
- 1/2 cup annatto (atsuete seeds) dissolved in water
- bagoong
- salt and pepper to taste
Procedure:
- In a large pot, bring water to boil, then add chicken and onions and cook on medium flame until very tender (30-45 minutes)
- When cooked, add coloring (water from atsuete), crushed peanuts, and peanut butter. Cook for another 5 minutes. Add rice flour to thicken sauce. Continue cooking until water has evaporated and you are left with a very thick and consistent sauce.
- In a separate pan, sauté garlic in oil. add banana heart, eggplant, and beans until soft and cooked through, being careful not to burn the eggplant or to crush the banana heart.
- Add cooked vegetables to Kare-kare and top with bok choy/pechay. Serve with hot rice and bagoong!
