Serves 4-6
Ingredients
1/3 cup butter
½ cup bacon, chopped
2 pieces Chinese chorizo, sliced thinly
2 tablespoons fresh garlic, chopped
½ cup sweet ham, chopped
7 cups cooked rice, loosened
¾ cup green peas
¾ cup carrots, diced
½ teaspoon pepper
2 eggs, beaten
Procedure
In a wok or large frying pan, sauté bacon in butter. Add chorizo, garlic and onions. Add ham and chicken cubes. Add rice, peas and carrots. Season with pepper. Mix well and set aside. In a separate pan, cook the eggs.
When the eggs are almost done, mix them with the rice. Serve hot.
