This recipe is from my dad's eldest sister Auntie Columbia. She used to prepare this dish whenever she visits from the Philippines. It was always a treat. Somehow her estofado tasted the best to me. When I asked her what the secret is, she would say "pwe-pwe", which I took to mean some kind of magic.

Paksiw Na Pata (Pork Leg Stew)
Pork leg is a prized ingredient in Filipino cooking. In fact, crispy pata (deep-fried pork leg) is an honored tradition in the menu of both fine dining restaurants as well as the corner carinderia(food stall). One other popular way of cooking pata is by simmering it in vinegar and other spices. The process is called paksiw. It is akin to the Chinese pata tim.

Where to Eat in Camiguin: Luna Ristorante
High noon and we just got back from White Island. Famished, we searched for the nearest restaurant available. The bistro we found close to the jump off point in Yumbing, which satisfied our craving, is Luna Ristorante.
