Barquillos: A Spanish-Insired Ilongo Snack
Barquillos is an all-time Filipino favorite crunchy wafer roll. A Spanish invention, the crunchy rolled stick has many different versions around the world. However, locally, the Spanish-inspired snack has been a well-loved pasalubong by Filipinos.

Ingredients
- 5 large egg yolks, lightly beaten
- Half cup sugar, depends on your taste
- ¾ cup milk (you can use fresh milk)
- ¼ to 2/3 cup all-purpose flour, sifted
- Lemon rind, finely crushed (or use 1 tsp vanilla)
- Butter or cooking oil
Procedure
- In a bowl, lightly beat the egg yolks.
- Pour milk and stir.
- Add the all-purpose flour and mix well.
- Add sugar according to your desired amount and the vanilla.
- Grease the barquillera with butter or cooking oil and prepare it to moderate heat.
- Place about a tablespoon of batter in the barquillera. Press and heat on both sides until it turns to light brown.
- Shape the soft batter while still hot using the handle of a wooden spoon or pin by rolling it. Don’t forget to grease the handle to prevent the barquillos from sticking.
