Longanisa Meatballs with Peanut Dipping Sauce
In a large bowl, combine all ingredients, except 1/4 cup of cilantro and peanut sauce, until just mixed. Roll into 1-inch balls and fry in an electric skillet or large frying pan over medium heat until browned. Arrange meatballs on a large platter and sprinkle with remaining cilantro. Serve immediately with toothpicks and peanut dipping sauce.

Liver is a good source of vitamins A, B, C and D. It contains glycogen and is considered an energy food. Liver comes in all sizes and flavors: poultry liver is the most tender and small; beef liver is the largest; lamb's and calf's liver have mild flavors as opposed to the strong distinctive flavor of pork liver.
